Recipe: Fiesta Roast

Ever look into your freezer and think, “Man. What am I going to do with this 40lbs of roast?” No? Well, at one time, I did have about 40 lbs of meat that I  had cut into roasts. While the idea was good at the time, I’m finding that my awesome roast recipe is now getting a little old around here.

Due to a recent bout with a head cold or whatever attacked my head, I was craving spice and I wanted it BAD. I had a smaller roast thawed in the fridge that needed to be cooked. After looking in the cupboard, I finally realized what I was going to try.

I had some taco seasoning, some Rotel and a some tortilla shells that needed to be eaten. Now, I didn’t have a run of the mill beef roast. I now had Fiesta Roast!

 Fiesta Roast

1 roast, mine was about 2 lbs

1 packet of dry taco seasoning

1 can of Rotel

Water

 

Place the roast in the crock pot.

Mix about ¼ a cup of water with taco seasoning (you may add more if you want it watered down)

Pour mixture over the roast

Open the Rotel and dump onto the roast, juice and all.

That’s it. I think it could use some more spice. If I was making it just for me, I would probably add some chili powder. I also had flour tortillas that needed to be used. I decided to shred the meat and make quesadillas! The shredded beef would also be great with some Spanish rice as a burrito.
