I sometimes find myself sitting at my desk wondering what we are going to have supper. If it’s one of those days, I normally end up ordering pizza. Instead of delivery, I end up going to pick up the pizza myself. I also found it very convenient that there is a Little Caesars right on the way home. I love them because there is no ordering over the phone. I can just stop in and take advantage of their current promotion for the $5 HOT-N-READY Pizza and we are good to go for supper.
Doing this saves me time of having to go home, order the pizza and then either wait for delivery or make another trip somewhere. Most of all, it saves me money. Have you ordered pizza for your family lately? Maybe it’s just me, but it sure is getting expensive. I can order two $5 HOT-N-READY Pizzas and have a quick and easy supper for the three of us for just $10. I also save a bit on gas since I’m not driving all the way home only to leave again.

I’m going to BlogHer 12 this summer in New York City. Like the true planner I am, I’ve been watching the cost of flights. I live in Iowa and I have three airports I can choose from.
I could fly out of Omaha which is usually the most cost effective. But when you add the cost of gas for the 1 ½ hour drive and usually a hotel, it’s worth looking into flying out of somewhere smaller but more local. To me, it’s worth paying a bit more for the flight if that means I can fly from somewhere where I don’t need a hotel room or find someone to bring and pick me up, or worry about leaving my car parked for five days in strange city.
We do have a local airport, it’s SUX. It doesn’t suck but that’s the airport code. Love it, don’t ya? Here is my issue with them. Or should I say, was my issue. Until recently, the cost to fly out to NYC had gotten close to $1000. While out of Omaha was $254 at its lowest price. The difference is definitely worth driving down to Omaha, paying the gas and hotel room.
However, American Airlines has come to town and so far it’s proved to benefit me. On opening day, flights from SUX to NYC were only in the $390 range! It was only $50 more than Omaha. That is so worth not having to make the drive to Omaha and all that comes along with it. Of course, I should have booked but couldn’t. After checking today, my flight went up to just over $500. Which is about $100 more than Omaha. But, it’s still worth the extra $100 after I factor in a $79 hotel room and gas.
It will probably be a week or two before I buy and I’m pretty persistent on checking the costs. I just hope they can continue to keep the pricing competitive. I do have to say that I’m excited that American Airlines is here and they do SUX. I mean that is the most nicest way possible.

Today we have a guest post from Lisa from The Party Works. She is offering tips to throwing your kids a birthday party minus the stress.
Every time you think about throwing your child’s next birthday party, you may feel overwhelmed, especially if you have more than one child and therefore have to plan these events multiple times every year. Here are a few helpful tips to get the party together without a hitch.
- Everything that can be done on the Internet will save you time. Make your invitations on your computer and print them rather than making a trip to Target to buy them. Order party supplies for theme parties like Super Mario party or mermaid party themes.
- Order the cake at least a week in advance from a baker that can do a fun graphic on the icing.
- Call in pizza and have them bring soda if you don’t have time to hit the store. If you would like to cook something simple like hot dogs that’s great too, but don’t take on too many tasks. Kids love pizza and won’t think you’re lazy for ordering it for lunch.
- Games or entertainment are necessary to keep the kiddos occupied for a few hours. There is a lot less trouble to get into if there are structured activities to keep everyone busy. Ask your child what he/she and his/her friends are into playing. You might expect that video games are at the top of the list, but sometimes kids will surprise you and request an old-fashioned water gun fight or a game of tag. Just keep in mind that kids will only stay focused if the entertainment is age appropriate. Popsicle crafts probably won’t work for 12-year-old boys. Scavenger hunts work for a lot of age groups. I still like them myself, and I’m in my 30’s.
It is possible to throw together a terrific birthday party without stressing yourself out too much. The Internet has made throwing parties wonderfully convenient. Your child will not care if the cake is homemade, they will only care if you’re having fun with them on their special day.

Recently, I was craving something sweet. I found a triple chocolate cake mix in my cupboard. Score!! I quickly went through the list of items needed and went to work.
By quickly, I mean really quickly. I thought it needed only one egg. Only it needed three eggs. Of course, I didn’t realize it until after I had everything mix together and saw that the batter was really thick.
So, I do what I always do when I need some information. I went to the internet. I found a bunch of different options and I thought I’d share with you in case you didn’t know.
What can I substitute for eggs when baking?
The most common substitutes are:
- Milk
- Soy Milk
- Bananas
- Applesauce
- Egg Beaters
Some other options are:
Applesauce, add a little more than 1 tbs for each egg. Or, I use 2 tbsp of baby applesauce… it acts as a binder and keeps it moist.
Flax seed can be used as a substitute for eggs. Grind 3 teaspoons flax seeds in a coffee grinder and whisk into boiling water. Leave it to stand for 5 minutes before adding to your cake mixture.
If it is just one egg you need, try taking a 1/4 cup measure, add 3 teaspoons of milk into it, and fill the rest of the measure with oil. (total milk and oil 1/4 cup).
I thought these were the most reasonable replacements. You can find more here.
Which did I use? I chose to go with 1 banana for 1 egg. I thought the consistency of the cake was good. I do think I could have mashed the banana a little bit better. I found some banana chunks through out the cake. It wasn’t a bad thing though. I could also taste a hint of banana but again, it wasn’t bad. If I wasn’t baking a chocolate cake, I would have tried a different route.
